Ginger Sweet Potato

Sweet potatoes made their debut at least 5,000 years ago in Central America and we still tout their health benefits today. This fabulously refreshing vegan soup combines all the vitamins, minerals, antioxidants, and fiber from the sweet potato with the uniquely zesty flavor of ginger, an anti-inflammatory that not only improves metabolism but reduces the risk of diabetes. We sprinkle both roasted pumpkin seeds and chopped chives on top and it is a flavor sensation!

Slightly open the lid on the soup and heat in the microwave for 2 minutes on low. Stir and heat for another 30 seconds. If it is not, hot heat for 30 seconds.
