Citrus Seared Shrimp, Cauliflower Rice, Asparagus with Tomato & Kalamata

Summer was calling and Chef's Marketplace answered with a bright, flavorful and healthy dish that begins with delicate pan seared shrimp topped with a tangy, herb seasoned citrus sauce and served with fluffy cauliflower rice, high in fiber and B-vitamins, nutrient-rich, roasted asparagus, and sautéed tomatoes and Kalamata olives for an added pop of flavor.

Remove the citrus sauce and keep to the side. Remove the shrimp & sides and place on a dinner plate. Cover the shrimp & sides with a damp paper towel. Heat in the microwave for 1 minute. Stir the cauliflower rice & asparagus, then add the container of citrus sauce with the lid removed and heat for 1 more minute. Test for temperature and if necessary heat for another 15 seconds until or hot. Serve with the citrus sauce.
