Greek Lemon Chicken, Potatoes, Zucchini & Garlic-Tahini Sauce

Take a mental vacation to Greece with tender, grilled, protein-rich chicken breast, served with perfectly seasoned and roasted pee wee potatoes, grilled zucchini, loaded with nutrients and antioxidants, and served with a side of the earthy, nutty flavors of tahini sauce.

Remove the sauce and keep to the side. Cover the entree with a damp paper towel. Heat in the microwave for 2 minutes on low. Stir the potatoes & vegetables and heat for 30 more second. If it is not hot, heat for 30 more seconds. Serve the tahini sauce with the chicken, potatoes & zucchini.
