Leek, Potato & Watercress

The Celtics of Wales knew how to conquer a harsh environment - with a steaming bowl of home cooked leek soup! We have rejuvenated this Welsh classic by combining a broth of onion, garlic, leek, russet potatoes, watercress, cauliflower, herbs and cashew cream, then sprinkling chopped chives and toasted almonds on top. Yaki Da!

Slightly open the lid on the soup and heat in the microwave for 2 minutes on low. Stir and heat for another 30 seconds. If it is not, hot heat for 30 seconds.
